The easy cowboy caviar recipe we ate in one sitting | Knowledge and joy

I saw a version of this dish posted everywhere TikTok so I thought I’d give it a go myself. There are lots of variations of cowboy caviar, and below is my personal take! I made it for a large group and served it with burgers, hot dogs and corn on the cob. Yum! I forgot to take a picture before we ate it, which is a credit to its taste.

Although there are quite a few ingredients (and lots of chopping to do), I kept my variation as simple as possible. I chose canned corn instead of fresh, added spice in the form of spicy honey and crushed red pepper (instead of chopped jalapenos), and went with a super easy version of a “dressing” that doesn’t even require pre-mixing in a separate Cheers.

Cowboy caviar


  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 orange bell pepper, chopped
  • ½ red onion, chopped
  • 1 can corn, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 mango, chopped
  • 1 avocado, chopped
  • Lots of feta cheese (amount is a personal preference!)
  • Juice of 3 limes
  • Drizzle spiced honey
  • Crushed red pepper to taste

Cooking tool


Add peppers, onions, corn and beans to a large mixing bowl and stir everything together. Add chopped mango and chopped avocado and stir well. (We ate this the same day I made it, but if you’re keeping it in the fridge for several days, I’d suggest adding fresh avocado to each serving right before consuming!) Add the feta cheese and stir to incorporate.

Add lime juice, a generous drizzle of spiced honey (I use the organic spiced honey sauce from Trader Joe’s!) and crushed red pepper to taste. Mix it all together well, then taste and adjust if necessary. according to your personal preferences.

Enjoy with tortilla chips, use it in a salad, or add it to tacos or wraps. Essentially, eat it however you want!
