Add packet oil to a wide/shallow 2 liter pot, heat on low heat. break in the eggs and stir well, stir them together. Remove the oven when it still looks partially soft. Store in a bowl or clean bag and scrape out the pan. Add 2 cups of water to the pot along with the dried vegetable bag, the bouillon concentrate and the coconut aminos. Bring to the boil, simmer gently for 5 minutes. Bring to the boil again, add the rice, stir well, cover tightly and turn off the heat. Let sit for 10 minutes. Open, fluff up rice and stir in egg. Top with fried onions, if desired, for crunch.
**If you’re not into carrying eggs (just wrap them in paper towels and put in your mug), Ova Easy eggs are my favorite choice for dried. However, socializing is not cheap. A dozen eggs are more than half the price of Ova. To find unwashed eggs, find a local chicken keeper or farmer and request them. Eggs can be stored at room temperature until washing for two weeks. Just rinse eggs off before use, in a stream is fine. So crack! Otherwise, you must follow your dried egg packaging when using.
